How to Make Spinach and Cream Cheese Lasagna

Ingredients

  • 1 medium white onion
  • 1 package of chopped spinach
  • 1 package of lasagna (any brand)
  • 1 24 oz. jar of Prego Italian Sauce: Roasted Garlic and Herb
  • ½ teaspoon Italian seasoning
  • 1 250 g bar Philadelphia Original Cream Cheese
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Cheddar cheese
  • 1 Green Pepper (or red pepper)
  • 1 ¼ cups water
  • ½ teaspoon garlic paste
  • 1 teaspoon chilli flakes (optional)
  • 5 tablespoons Canola oil (or any cooking oil)
  • 1/2 teaspoon salt
  • Cooking spray (or any non-stick spray)

Steps

Preperation

  1. Take the spinach and cream cheese out of the fridge.Allow spinach to defrost. It will take time, so do this first. The cream cheese is easier to cook with if it is soft.
  2. Cook the lasagna.Follow the instructions on lasagna packaging to cook the lasagna. If there are no instructions, fill a pot half way with water and bring to a boil. Add 1 ½ teaspoon of salt to the water. Put lasagna strips into the pot. Stir occasionally. Cook the lasagna until it is soft. Drain the lasagna using a strainer. Set aside to cool.
  3. Dice the ingredients.Using a knife and cutting board, finely dice the onion and green pepper into small cube-like pieces. Set aside each ingredient in different bowls.
  4. Make the sauce.Pour the Prego Italian Sauce in a pot. Add ½ teaspoon of Italian seasoning, 1 ¼ cup of water and 1 teaspoon of chilli flakes (optional). Bring the sauce to a boil for approximately 5 minutes, while stirring occasionally. Set aside once boiled.
  5. Take the cheese out of fridge.Shred the cheese if it is not already shredded. Put 1 cup of mozzarella cheese into a bowl. Do the same for the cheddar cheese. You can either put both cheeses in the same bowl or separate. This allows it to defrost and for easier access later on.
  6. Preheat the oven.Empty oven and double check that there is nothing inside. Pre-heat the oven to 350F (177C).

Making Spinach and Cream Cheese Filling

  1. Cook vegetables.Set stove top to the highest temperature. In a pan, add 5 tablespoons (73.9 ml) of oil and put the pan on the stove top. When the oil is ready, add the diced onions, half of the diced peppers and ½ teaspoon of garlic paste. Stir constantly.
  2. Add the spinach.Add the packaged spinach when the onions are cooked (light brown color). Stir occasionally. Once the spinach has condensed and become a darker shade of green, turn off the stove.
  3. Add the cream cheese.Remove pot from the stove and add the cream cheese. Stir until the spinach and cream cheese are evenly mixed. Make sure that there are no chunks of cream cheese.
  4. Spray dish.Spray the dish evenly with cooking spray. You can use either a baking pan (13x9x2 inch), or a casserole dish (3 quarts) to cook the lasagna in. This is to avoid the lasagna from sticking to the bottom.

Building the Lasagna

  1. Lay one strip horizontally in a plate.
  2. Add filling.Add approximately 2 tablespoons (29.6 ml) of the spinach and cream cheese filling to only the middle part of the strip.
  3. Sprinkle some green peppers and cheese.Add this on the same part with the filling. Spread it evenly.
  4. Pour sauce.Add about tablespoons (37.0 ml) of sauce on it.
  5. Fold lasagna strips.Fold the two sides that don’t have any filling on it, towards the middle. Put this piece in the dish. Repeat steps 1-5 for the rest of the strips.
  6. Add remaining sauce and cheese.Pour the remaining sauce and cheese evenly over the lasagna, once the dish is full.

Cooking the Lasagna

  1. Bake the lasagna.Bake for approximately 20 to 25 minutes. If the cheese has turned a golden-brown color and has bubbled, then the lasagna is done.
  2. Serve.Serve hot with sour cream or salad.

  • If you're using fresh spinach, chop spinach into tiny pieces. This is so you won’t get a rough texture in the filling
  • Try to use garlic paste instead of cloves. If you don’t have the paste, blend 1 clove in a bender, or finely chop it.
